Healthy lunch box ideas for kids

With International school meals day just around the corner, we thought we would take a look at some interesting but healthy lunch box ideas that could get your kids talking about food.

One of the aims in schools is to get children to understand food, what food is part of their tradition? Which foods do their family eat regularly? What food is considered healthy? Where does food come from? All very important topics of conversation and one way to pique their interest is to provide interesting lunch box options if they take a packed lunch.

Take a look at our fun conversational starters, that are also healthy and will give them the energy to get through the school day. 

  1. Cucumber sushi

Simply hollow out chunks of cucumber with a thin layer left at the bottom of each slice. These can be packed with veggies, cheese, and lean meat to give your kids a healthy and fun lunchtime meal.

 

  1. Alien Muffins

Green muffins that carry a nutritious punch. The vegetable taste is hidden by the banana, and you can always add a few chocolate chips to sweeten slightly the cool green colour is a great talking point and you can think of an interesting range of names for them; hulk muffins, slime cakes, alien muffins…….

You will need:

  • 1 egg
  • 1/4cup coconut oil
  • 2medium bananas
  • 2 vanilla extract
  • 6 spinach
  • 2cups whole wheat flour
  • 4 tablespoons honey
  • 3 baking powder
  • 1/2 baking soda
  • 1/2 cinnamon
  • 1/2 salt
  • ½ cup chocolate chips(optional)

Add oil, banana, spinach and extract to a blender and puree. Add to dry ingredients and spoon into muffin cases. Cook for approximately 20 minutes and allow to cool before eating.

  1. Fruit and vegetable crisps

Rather than putting shop brought crisps into your child's lunch box, why not make some at home.  Thinly sliced beetroot, sweet potatoes and parsnips all make for great crisps. You could add sweetness by drying apples or pears. 

For healthy crisps, thinly sliced fruit and vegetables and place on low heat in the oven. This will dehydrate them and make them crunchy; you can always add a little oil if you prefer a more traditional finish.

 

  1. Pink energy balls


These pretty little balls pack a powerful energy punch that all the family will enjoy. With no added sugar and all-natural ingredients, these will become lunch favourite!

You will need:
1 small punnet strawberry
1 cup oats
3/4 cup grated coconut
5 dates
1/2 cup cashew nuts

In a blended blitz all ingredients except coconut. When blended it should reach a soft dough-like consistency. Add a little of the coconut and place it in the fridge to firm.

After 20 mins remove from fridge and roll into ball shapes and cover in the coconut to give a good coating.

 

  1. Broccoli Bites

We all want a healthy lunch but preparing one in time is often tricky. You can prepare these mini muffins at the beginning of the week and keep them in the fridge to warm up when you want them or simply eat them cold.

You will need:
1 sachet Britt's Superfoods wheatgrass juice
6 eggs
6 small tomatoes, chopped
2 handfuls of finely chopped broccoli
125g reduced-fat cheddar
1 teaspoon oregano

Preheat the oven to 180 degrees and grease a muffin tin. Mix eggs and add all other ingredients plus seasoning to taste. Pour into Muffin tin and cook for about 20 minutes until risen and golden.
